Tasting Notes
The nose is characterized by a sweet mouthfeel with subtle citrus notes reminiscent of navel oranges and mango.
Carefully Selected Ingredients
“Hamakomachi”, a rare variety of sweet potatoes with orange flesh, is picked for crafting the shochu. It contains citrus-like aroma compounds that characterize the scent of the spirit. By harvesting about a month later than usual, we take advantage of the timing when the compounds are at their most potent.
Craftsmanship and Special
We use black malted rice koji for the shochu. This particular type of koji, not commonly used in shochu crafting, creates an unparalleled sweet flavor by fully extracting the aroma components contained in the sweet potato.
Food Pairing
Chicken tomato stew, Fried chicken, and Pizza, etc.
